Prepare as in It's Just Something Gustavo Says. You don't need to flatten them out, as they'll flow on their own.
That's about 133 calories per cookie. I had 4 this evening, and they were fine. I actually chopped the raisins this time, as they're big enough that I ran into problems with raisins hanging out of cookies with the last batch.
I compensated for having both honey and margarine in the recipe by adding no water at all, not even what was specified for the egg replacers, and that just about worked. I added 25g of rye flour after dropping the first 2 sheets, and mostly succeeded in avoiding the pancake problem in the 3rd and last sheet.
The buckwheat honey taste is quite obvious, but it doesn't totally overshadow everything else, so I'd say this combination works OK. Brown sugar, after all, is pretty strong-tasting itself.
