Take Me to Your Stove

So, my plans for the 3-pound mason jar of buckwheat honey have come to fruition in the form of a full 4-dozen oatmeal raisin cookies. Behold the recipe card:

IngredientsCalories
300 g rye flour 1100.0
0.75tsp.baking powder
0.75tsp.baking soda
0.5tsp.salt
0.5tsp.nutmeg
0.5tsp.cinnamon
226 g trans-fat free margarine 1570.1
1.75 cups buckwheat honey 1680.0
2egg replacers30.0
375 g rolled oats 1463.4
165 g raisins 536.2

48cookies6379.8

Prepare as in It's Just Something Gustavo Says. You don't need to flatten them out, as they'll flow on their own.

That's about 133 calories per cookie. I had 4 this evening, and they were fine. I actually chopped the raisins this time, as they're big enough that I ran into problems with raisins hanging out of cookies with the last batch.

I compensated for having both honey and margarine in the recipe by adding no water at all, not even what was specified for the egg replacers, and that just about worked. I added 25g of rye flour after dropping the first 2 sheets, and mostly succeeded in avoiding the pancake problem in the 3rd and last sheet.

The buckwheat honey taste is quite obvious, but it doesn't totally overshadow everything else, so I'd say this combination works OK. Brown sugar, after all, is pretty strong-tasting itself.
